This has quickly become one of my favorite meals. It is a great vegetarian source of protein (beans & avocados) and it is so easy to make I feel like it’s not even worthy to be a recipe. But it tastes good so we will go ahead and deem it worthy.
Spicy Bean Dip
One can of low sodium black beans, rinsed
One can of Ro*Tel tomatoes
One avocado, diced
One bag of corn chips
1 tsp ground pepper
1 tsp garlic powder
Mix the beans, tomatoes, and avocados together. Add the pepper and garlic and mix well.
Dip your chips and enjoy. 🙂
*You could also make nachos by adding cheese and heating it up or make easy bean burritos by adding the mixture in a tortilla and adding some cheese and salsa. Endless possibilities, you just have to get creative.
